Anyone used Kveik Yeast in a sugar wash?

Postby jandaco » Mon Jan 31, 2022 1:30 am

I have been using Rads cereal sugar wash for some years with good results. However 48 hours ago I started a beer (43L) with 11gm of Voss Kveik yeast it started at 1.053 and finished at 1.010 in 48 hours at a maintained temp of 40C. I am wondering if I could use this yeast in a sugar wash, it likes a high temp and can withstand abv up to around 14/16 % I believe. Furthermore it can harvested from the fermenter, dried and frozen for the next brew.

Yep, I use Voss quite a bit in my beer brewing - I harvest/wash and reuse the yeast up to about 6 - 8 times. I have used it a couple of times in a FFV wash to great effect. I am just careful to keep the OG down to about 1.065 - 1.070.
I have also used the same yeast for a hard seltzer with satisfactory results, and this is a 100% sugar wash (with a bit of DAP and beer yeast nutrient). :handgestures-thumbupleft:

Thanks, interesting, you say to keep the sg down so you find it doesn't work well at high sg? I normally start my sugar washes at about 1,080 to 1.090.

Probably more from habit than anything else. I came into this hobby after quite a bit of all grain beer/cider/mead brewing experience. I believe the best way to get a clean ferment is with happy yeast and the best way to keep yeast happy is with a favourable environment. I am prepared to sacrifice a couple of % points for a cleaner fermentation.

Having said that, this yeast is probably more than capable of handling 9 - 10% aclohol. Also I usually ferment at 30 - 35*C with Voss.

Also, just as a side note with reusing yeast, after I have exhausted the yeast (about 6 - 8 clean/wash/reuse cycles) I add it to a boil to be used as yeast nutrient. Works a treat.

I've only used Hornidal with beer and found it produces some unusual tropical esters. Still not sure if I like it. Voss has a more neutral profile. I reckon the esters from Hornidal would compliment a rum wash though.

I used the following kveik yeast in a sugarhead whiskey a while back. Fermented at 31 deg C. Adds quite a unique tropical fruity undertone that i quite enjoy every now and again. I do plan on trying some other strains when i get a chance one day.
