The liquid enzymes are great and will do what your asking, I haven't used them personally, but have talked to many who have.
Malted grain will still add a different flavour compared to regular grain.

Do you have an ozzy source for them?

I haven't used the SebAmyl enzymes but I use a similar enzyme made in Australia for my unmalted (& some malted) mashes. Check out the Deltazyme Rye & Deltazyme AMG. They work the same as the SebAmyl with the Alpha Amylase in the Deltazyme Rye working between 40-90c & having an optimum temperature of 85c, basically the same as SebAmyl HTL. Costs a lot less as well, last time I bought them it was $42.50/L for the Rye & $26.80/L for the AMG.

I have and continue to use them.
They work well “as advertised” on corn (maize) wheat barley and rye.
Temperatures and correct pH levels make a huge difference.
For cereals, there is a 3rd. SebFlo TL

In fact, I have been using them over the last couple of days to mash raw wheat for an all grain vodka - totally wheat based, no sugar added at all.
