Just starting out and need some advise? then post it in here.

Distilling Red Wine into grappa

I have 7 bottles of Shiraz that are getting old and some Sherry that i bought coz it was cheap and came in a 2 litre flagon.
I want to distill these with the tails jar to bump the yeild and make some grappa.
I plan on diluiting the boiler charge a bit to protect my brand new element.
and making careful cuts.
Is there anything else i need to be aware of or do?

4l casks of white wine are cheap enough to throw in the still too. You could boost with that.

What's the difference between Grappa and Brandy?

They're both distilled from wine as far as I know...is it brandy when it's aged in oak to get colour?
I have a portuguese uncle that distills grappa, he collects everything but the foreshots...stuff is putrid as you can imagine... :puke-huge:

Grappa is a peasant drink made from the skins after the wine is taken off. Brandy is distilled wine.
