Just starting out and need some advise? then post it in here.

My First Molasses Wash

Well, after sampling my boys "white rum" I figure its time I tried my hand at a molasses run.
The stuff is awesome.
I will have a separate set of saddles for the T500 and a new fermenter just for the molasses runs so I dont get flavour mixing etc.
What I need is a simple/easy recipe to start with, I dont want black crap spitting all over the place.
Ideas and thoughts appreciated.

Pint's fast fermenting mollasses wash. Can't be beat for a white rum. You don't need to fool with dunder either for white. Pull off as close to aezotrope as you can manage.

Andy your T500 will make a nice white rum - I never had any problem with the molasses flavour "sticking" to the saddles as long as you give it a good rinse, then do a long equalisation the next time you do a run it will all come out with the fores - I did have issues with some gin botanicals though.

But if your set on changing the packing, then wont hurt mate.

Azeotrope is beyond a T500's capabilities, but that could be a good thing for producing a light white rum ;-)

Pint's wash is a cracker & one I'm doing more of lately.

Pint's wash is a cracker & one I'm doing more of lately.

This is good news :dance: and I will overlook the obvious put down of the mighty T500 :teasing-neener:
So, to strip or not to strip this is todays question ??????

No put down intended, and no strip required :mrgreen:

However, you could always just double run it through your pot still and end up with a great rum anyway :D

Andy, if your going to strip the wash first keep some of the wash to add to the spirit run, then leave it in 100% reflux for 60-90 mins before taking off the spirit. Kiwi from AD put me onto this, and the heat + acid from the wash with a bit of time does seem to bring out more lovely rum notes in the product - I've only done it the once, but it was my best white rum to date, and I'm sure Kiwi is on to something with this method.

If your going to do a big run with a lot of alcohol in the boiler, you could do this the evening before to avoid making it an all day session.

For the first time run's I want to keep it simple and to this end I will be running the T500 and making hard cuts.
So today I rang the local feed place to get a price on molasses ($18.75 for 20lt) and I asked if it preservative free, they didnt know.
Is it easy to tell ?? What goes wrong if it has preservatives ??
They said its used to feed to horse's

Hey Andy,
the place i get mine from, the Molasses is usually half fermenting in their 1000L drum.
this is the way i can tell that there are no preservatives.

Pretty sure mine is preservative added. it doesn't like starting back up on the lees of the last fermentation and dunder slows it down too.

If using Pints wash for white rum you won't want dunder anyway, so just keep a cup full of lees for a yeast starter and wash the rest out.
The original wash ferments just fine with the mollasses i use.

Got the sticky stuff today, its sold by litre not kg but still no answer to the question of preservatives.
Got my extra fermenter as well today so now Im just awaiting Punkins super yeast and DAP before the fun begins.

SHHHSHHHHH, she thinks it will just smell like the vodka star.

I had the same problem with a brand of feed molasses over here too, I always seemed to have a large amount of sediment at the bottom, so rather than restarting on the whole lot, I'd scoop a 400ml jar of the yeast as best I could - wash out the rest and start again. I have never done more than 3 x back-to-back ferments on the same yeast as rum is not my main gig, so I don't know if it is sustainable longer term.

Dunder also slows down my ferments - adjusting the PH did help a little - but I found using just a little dunder that you let get really funky and moldy, gave better flavours than a lot of fresh dunder. (I know some are uneasy with dunder infected with unknown bacteria - but we make our own life choices).
