Rye in a sugarhead

Postby bluc » Fri Jul 15, 2016 3:13 pm

Was reading rye does not work well in a sugarhead is that right?

Going to do a modified zac's cornflakes with a tin of Morgans caramalt and would have liked some rye flavour/ Should I use grain or would it be better to save that for an all grain mix(it is a bit expensive) and use something like ryevita crispbread or a loaf of rye bread? If using ryevita any ideas how much I need to use in a 30l batch?

Plan on 750g corn flakes(kellogs)
1.5kg tin of Morgans Caramalt
rye?
8Kg sugar
30l ferment

Looking for bourbon-ish whiskey
Wont be doing gens for the first lot I do to get my flavour profile where I want it..

just wondering...8kg sugar for 30L? does the caramalt tin have sugar too?

seems a tad high isnt it?

Thanks for the heads up says its made completely from malted two row barley but does not seem to have a sugar content on the tin, It wouldnt be 100% sugar so maybe I just knock a kilo of sugar of the total
Edit Just looked it up online and it says

"EBC: 19.6 (in 23ltrs)"
any ideas what that means?

It's a measure of colour, not sugar content.
Malt in a tin is basically a concentrated (malt) sugar syrup so would be high in sugar content.

My go-to 'CFW' looks something like:

2 boxes of cornflakes, usually one Kellogg's and one home brand
A dozen or so weetbix
A kg of LME, or 500g of Coopers Brew Enhancer (DME)
8kg white sugar
~50L total volume

I call it 'Cornflaker's Mark' :handgestures-thumbupleft:

I know guys have had success adding a loaf of rye bread/pumpernickel for a bit of rye bite, I'd just chuck it in on top of my recipe above.

Let us know how you go!

If you want rye do a search for 25 kg rye flour on Google from what i have read that the whole of the rye can be used and flour is OK but it scorches and burns on hot elements.

A little after 2am, laid in bed for an hour & went to work :handgestures-thumbupleft:

I got some rye grain for my next batch, just 500 grams so I'll try using that much in each gen.

Blue,
I've run a sugar head with 20kg cracked corn, 20kg malted rye, 20kg Dextrose for a 180 litre ferment. It worked out good - give it a go. Have fun.

Ok my final recipe is

30l end volume
7kg white sugar
1.5kg tin of Morgans caramalt
483grams of kellogs cornflakes
166g of ryvita crisbread original branded ones(I happened to have two 250g pack so split them up between 3 ferments)
1/4 teaspoon citric acid
pinch of epsom salts for yeast nutrient.

Should be able to pitch yeast before bed just going to use lowans bakers yeast :handgestures-thumbupleft:
Hoping for a bourbon-ish drink

7kg of sugar and 1.5kg of LME in 30L is going to be pushing the yeast mate... What was your starting SG?

I use that much sugar in 50L ;-)

I forgot to get one. :angry-banghead: I used brewers friend the sugar and the lme in 30l should give me 9.48% does the cornflakes contribute sugar wise also? I didnt factor that in if so was aiming bit higher at 10% for this.. :-B
