Let us know how it goes Tassy! I find the LME really adds something special to a simple CFW :handgestures-thumbupleft:

Ive added it to all my cereal washes, this one will be a single run though 4 plates. I had planned to stop for the winter :laughing-rolling:

5kg sugar
fermenting with american whiskey yeast

Hey tas how did you handle the rye? Was it just cracked or did you grind finer. Just i read couple places to get the rye flavour it has to be real fine  mine is still going flat out so at least it didnt stall..

Hows your wash going bluc? Im going to run mine Friday night if I get a chance, finally getting the hang of the American Whiskey Yeast, doesn't like a high SG, my wash was 1.065 and it took off like a rocket and is almost done.

So I had a sample of this white last night, compared to a MacWhisky it has a subtle spice flavour, hard to pin down yet. Its certainly not as full on as a straight Rye, which is good IMO, going to put 2L on heavy char american ok :handgestures-thumbupleft:

Stripped 25l today, been 18 days airlock was equal, used my usual method flat out strip down to 20%. Got 10% more volume 5l as apposed to 4.5 and
Ended up 10% higer abv 50% as apposed to 40%.
Smelled good and tasted ok hope to get rest finished and spirit run done before sunday. Then some time on oak will see what i get. Not much rye flavour maybe oak will help but there will be more rye vita and less sugar next time round..

Prob a dumb question but when doing a sugarhead how much sugar do you subtract from the total sugar for unmashed grain, i mean if do 30l 1kg sugar per 5l water 6kg sugar do I subtract from the 6kg for unmashed grain or do you get no sugar and just flavour from unmashed grain and use the full 6kg?

You may get a little alcohol from the grain, I have read that you can mash without cooking, never tried it. I would use no more than 5kg for a 30L wash if you are adding grains for flavour, more sugar = less flavour for a 27L wash I am currently using 4kg sugar and 2kg cracked corn, 2kg rye and 1kg barley as a bwko sort of, the first couple of strips smell pretty good. Its got a nice corny/grain flavour :handgestures-thumbupleft: I have found not going over a SG of 1065 has done wonders for flavour and quality of my whiskys.
