Has anyone got a good Amaretto recipe and a good Cointreau recipe.

I know it is a cheap cheat but the Still Spirit Cointreau essence is pretty darn good.

For a cointreau zest a heap of lemons and macerate in 95% for a few weeks then run back through a pot still :handgestures-thumbupleft:

Sam I always thought it was oranges not lemons for Cointreau?

AMARETTO

1 cup water
1 cup white sugar
½ cup brown sugar
2 cups neutral
2 tablespoons almond extract
2 teaspoons vanilla

Combine water and sugars in a saucepan over Medium heat until boiling, and all sugar is dissolved.
Remove from heat and let mixture cool.
Add neutral, almond extract and vanilla. 
If you want it darker then try using less white and more brown sugar
Make sure you extracts are not oil based.

Yes, I thought it would be oranges and not lemons, although might be interesting to try a mix with lemons as I have plenty on my tree.
