It has been a while, so here is a sample. I would say it hasn't gotten any darker for a while. Smells better over time.

I just posted a first time barrel user guide in the oaking and aging area, I did the same thing with a much smaller keg... They suggest keeping the keg as full as possible by the way, to stop the area that is not touched by liquid from drying out. My mistake was not to prepare the keg, you seem to have been let off lighter than me...

Some time ago on a forum far far away :roll: I was reading about the three barrel system

Fill barrel #1 and in maybe six months, fill barrel #2 and six more months #3.
So you have 18 months and three full barrels.....

What next?

When you want some decent whiskey, take from Barrel #1 ... top it up from barrel #2 and then top up barrel 2 from #3.
#3 is topped up with new spirit.

Not a bad idea if you have the space and remember.... it's a never ending supply of your best whiskey. :D

Just a thought. :think:

OR.... just make a 50 ltr every 6 months to a year... also a never ending supply of top shelf whiskey. :handgestures-thumbupleft:

These pictures are all well and good, but could you attach a sample of the smell to your photos please?
