Hi guys this is my first post on the site. Iv been making neutral spirits from sugar mash for just over a year now. Flavouring it and over all have been pretty happy. But iv decided to move on to bigger and better things and do a grain mash and make my own legit whisky. Ive always drunk JD in the past and figured I need to start somewhere, so my plan is to make a JD style whiskey with an Australian twist on it. ie use all australian products (except still use american oak for aging). Thus, I'm very interested in using red gum charcoal to filter my whisky prior to aging. What are peoples thoughts? Should I just go down to the local timber yard and buy some untreated red gum and make my own charcoal?

JD uses maple charcoal , you can get that same slight maple hint by adding a cap of maple syrup to a ltr of ya finished whiskey
