After getting a few trays of strawberries for a good price I decided to undertake a little experiment. It involved using a SPD type maceration, I always go a bit easyon the sugar.
Results are as followed
95+ neutral - lost alot of flavor when watered down, but good color and nose
60% light rum- clashed with the strawberries a bit but drinkable
60% light usjssm type - same as rum but the grainy taste gave it more depth.
60% neutral - very nice when cut back down or a strong shot, the strawberries really sing.
40% neutral- much like the 60 but sweeter, great flavor, nose and color.
50% heavy gin - WOW. It one of the best things I have ever put in my mouth. The gin really brings out that strawberry flavor, def a must try.
I did a few batches of all in 3l glass jars. Half filled jar with strawberries and macerated for two weeks. Then strained and kept and labeled. Sugar was added back to the strawberries and kept aside for blending.
