Chucked a vanilla bean in mine but really after having a taste I reckon a cinnamon stick would be the go. None on hand unfortunately.

Cinnamon actually gives a very warm spice note and I wouldn't add it to this as it can overpower. I like it in the apple pie with neutral and fresh apple and raisins but for this? Not so much.

Your choice mate but vanilla is a much better match.

Well I only had vanilla, so vanilla it was :D .
The missus is picking me up some maple syrup as I type.

At the risk of sounding like a 15yo girl.........OMFG...this stuff is awesome.

Filtered the banana/vanilla bean mix....had a taste....mmm ok.

Added the sugar syrup and had a nip over ice......tasting real nice.

Drizzled some maple syrup over.....fucking fantastic.

Ended up just putting 100ml of maple syrup in with lot.
We even tried it with a little milk and it was nice. My missus loved it but I think I prefer it neat.

So I have just finished straining and filtering out the bananas which was a real bitch. About 5 or 6 passes through cheese cloth and coffee filters. It's amazing how such a large piece of banana can squeeze through such a small hole in a filter. Next step is maple syrup, vanilla and sugar syrup.
Roughly how,much maple and vanilla is everyone using for 700 ml of this stuff?

A teaspoon of vanilla and a tablespoon of real pure maple syrup not the fake stuff.

Another tablespoon if you think it needs it. Don't overdo the vanilla though.

Cheers mate. The banana spirit tastes pretty nice as it is just calling out for a bit of sweetness from the sugar and maple syrups then Will be delicious.

Well pretty much good of the get go but 3 days to a week in the fridge will marry the flavours nicely.
