Hi,
this is old favourite of my grandfather. Adjusting the content of alcohol and sugar will make it into nice liqueur for someone avoiding stronger drinks.
Stout vodka (liqueur) – makes 1,5L
Ingredients:
750ml stout beer
600ml neutral spirit 94% - 96%
150ml water
6 heaped table spoons of honey
¼ teaspoon of cinnamon (can be just 1” - 1 1/2” piece)
2 cloves (be carefull here as cloves are rather powerfull)
good pinch of ground nutmeg
2 teaspoons of vanilla sugar or 1 tsp. of natural vanilla extract.
1. Place water honey and the spices in a saucepan. Bring to boil. Take of the heat and remove the cloves.
2. Add the stout beer with care and slowly so it does not foam over
3. Bring all to boil slowly. Take of the heat.
4. When cooled a little (say to 60C – 70C) add the spirit while stirring.
5. Cool down, bottle and store in quiet room for at least one week (it improves with time) and 3 months seems to be the right period.
Best served cold.
It can be tasted immediately when cool. It is actually ready to drink at this point but age mellows it and brings out the hiddedn maltiness.
