Spicing up your rum

About a month ago I thought I would try making some rum a bit sweeter, I opened the jar today and was pleasantly surprised by the aroma of this stuff.... so of course I had to try it :oops:

Here's what I did.

4L jar
10 black pepper corns
1 slice pine apple
1 teaspoon vanilla extract

Leave for a month and strain.....

Turned out very very nice :)

What's others doing with their rums...... ??

Pineapple hey? Hmm, might have to give that a shot. I've just got my first batch ageing, so not sure if it will be any good or not, so don't take these recipes as tried and true, but:

700mL 65%
1/4 cinnamon stick
1/4 tsp vanilla bean paste
6 sultanas
american oak chips

I've also got other bottles with varying amounts of the above. So far the one with double those ingredients is smelling and tasting the best, with the vanilla and cinnamon really shining through.

I should add that my rum had already been oaked and diluted to 40%, it was a run I did months ago but just wasnt happy with the flavor from adding a little too much tails.

Rather than waste it I thought I'd try and do a spiced version, it's really good!

Look I know 10am is rather early to be drinking, but it is sunday :lol:

10 peppercorns, you're a brave man Gungadin.

Pepper really comes across in macerations, 2 works wonders in 4l :lol:

:? I read elsewhere that 2 pepper corns per liter is the go?

Anyway the peppercorns didnt really come across very strong at all, the taste from them is very subtle so not sure mate... But I would definitely do the same again :)

Nah every days Saturday, cept Sunday cause that's when the shops are shut. 8-)
