Whoa that's a nice drop... as I mentioned earlier to be on the safe side I did a half size batch and used 7 x dbl espresso's instead of instant - and I used my first TPW hearts which is at 55%ABV - man it's good.

I had a bit on ice last night and i'm thinking I may have to cut back on the amount of sugar as I don't normally have sugary things (there's no way the coffee had anything to do with it)... I was still staring at the walls at 1am this morning.
AND it's so good I had it for brekkie this morning instead of my usual coffee :scared-eek:

Made a batch of this, got that burnt taste and it got me thinking about making this with cold brewed coffee. Anyone tried it? When I do I will post results.

I add the coffee after boiling the sugar syrup.

Yes I have, only because I've just learned about cold brew coffee... :D AND had to try evertang!

I lie it better, much better actually because the coffee comes out less bitter I can use less sugar (I like about half the sugar) but it still needs tweaking!

I find it makes this recipe nicer!

That's how I did this cold brew....

It's the heat that makes the coffee bitter - extracts the oils from the beans... that is mainly avoided with cold brew....

Made a half batch last night. Stirred and stirred the coffee mix and it was great. Slept like a baby after 2 small mixed glasses and milk. The vanilla taste would give it a better taste still.

Just knocked up some of this but modified the recipe. We had some Robert Timm's instant coffee that we didn't like (we normally just drink nescafe blend 43 but this stuff was on special) so was looking for a way to use it up. Also, didn't want the full amount of sugar (went for a bit over half the amount) and couldn't be bothered simmering on the stove for an hour. Didn't want to waste a whole litre of 40 % on it, and had plenty of neutral on hand, so I decided to go for a 1/4 recipe. This is what I did:
Combined in a saucepan 1/2 cup sugar, 3/4 cup water and 30 mL instant coffee granules (I used a 1/8 cup "coffee measure")
Heated and stirred until the sugar dissolved, which took only about 2 minutes. Definitely did not go to boiling. Not all the coffee granules were dissolved but I'll get to that later.
At this stage it was only warm to the touch. Added 1/16 cup (half the coffee measure) vanilla essence and 100 mL 95 % abv neutral.
Then diluted to 500 mL with water that I'd first poured into the saucepan to dissolve the last few granules of coffee.

The other half likes it, so won't bother with extra sugar.

So if making the full recipe it'd be 2 cups sugar, 3 cups water, 1/4 cup vanilla essence, 1/2 cup instant coffee, 400 mL 95 % neutral and dilute to 2 L.

My personal tweak of this recipe is
In a 2l bowl/jug, 350ml boiling water (kettle), 250g/300ml raw sugar, 20g Moccona #5, mix, add 30ml queen* vanilla essence, 500ml 40%, mix, optional dash of caramel syrup - this makes just over a litre

Not sure i would use a coffee that i didnt like hot db? the vanilla must be masking your "off" flavor, always good to find a use for stuff you dont want though

* aldi, bingo brands have a brandy base from my tastings, fine if you like brandy note in the background, but many dont

After making a few batches of Espresso Infused Vodka I thought I'd give this recipe a try.

My slightly modified version was:

Ingredients:
3 cups water
1 cup raw sugar
1 cup coffee (made from 2 coffees from coffee pod machine)
2 tsp vanilla extract
4 cups 46% neutral hearts (2 cups 93% neutral added to 2 cups water)

Method:
Warm 3 cups water on stove. Add sugar and dissolve.
Add coffee, low simmer for an hour - until mixture is down to about 1 litre
Allow to cool to room temperature, then add vanilla extract
Add neutral to water to dilute, then stir in slowly to coffee mixture.
Bottle and enjoy!

Makes 2 litres.

I found that using raw sugar and adding coffee from the start over a very low simmer prevents the coffee from burning and also adds a caramel flavour to the mixture.

The only problem now is that this so nice, we drink this stuff too quickly!

Just made a batch of this, one half of the batch exactly to recipe except used espresso instead of instant coffee (very nice!) and 1/2 modified by replacing some of the neutral (about 60 mil) with some 60% ABV rum (macstill recipe). We preferred the alteration and think it came closer to the real Kaluha, which uses rum as its base. We would be very happy with either one. So for a full batch we effectively replaced 100 mil of neutral with rum.

We also might try replacing one cup of the white sugar with very dark brown sugar next batch to get the molasses undertone.

I made this last night. Don't think it's going to last long here.

I substituted 1/4 cup of ground coffee for the 1/2 cup freeze dried. Filtering out the grounds at the end took longer than I have the patience for. Am going to try using strong filtered coffee instead of the water next time.
