Hi all I'm thinking about making a wheat vodka with 70% wheat and 30% wheat malt for conversion then fermenting off the grain with simple bakers yeast. And add some dextrose for abv around 10%. I'm doing about 80ltr mashes but havnt done calls yet. I'm guessing about 10kg wheat and 3kg wheat malt. I don't want to use chemicals for pH or anything too advanced like citric acid and then rest of it anyone tried and had good results with something similar

i know its not wheat but have you thought about adding rice instead of dextrose to boost up the mash to 10% ??

that way your not adding sugar or dextrose :think:

If your going to the trouble of all grain why not use a decent yeast too?

IMO Bakers is a good start to learn how yeast works, as is the sugarheads for learning fermentation but if your gonna make the jump then go all in.
I'd suggest EC1118, has an alcohol tolerance of 18% (not that you should aim for that) and ferments out nice and clean, just the ticket for a good vodka ;-)

Do not think the wheat malt will do the conversion at that ratio dextrose is sugar but is produced from grain so dextrose may be cheaper.

Dom, not sure really what u r trying to achieve. Are u chasing an absolutely clean/tasteless vodka or a hint of the wheat as an aftertaste.
If it is the former (no taste)..hit up a Kale wash... VERY simple/quick/cheap and extremely forgiving... a real no bull wash which produces amazing results. Pot strip then reflux for a sensational tasteless mixer...i do, and my mates are true impressed.

Thinking about the rice now as part of my vodka well why not use all rice say 10kg rice 8kg dextrose 2 kg malted barley for conversion only not flavour and maybe a few packets of dry enzymes if I could find alpha amylase and beta amylase I wouldn't use barley.
They have ss alpha amylase enzyme in the shop near me also mj dry beer enzyme and lo carbon enzymes will any of these help with full conversion.
And I'm going to go with ec1118 for yeast

If I use ss alpha amylase enzyme in the packets will I use less alpha enzymes in the barley to use as a beta amylase in the secondary conversion

Malted Wheat if you can not get a high enzyme content barley would probable have less flavor and 10 kg rice would multiply when you cook i put through a coffee grinder and if you let cool after cooking starts to form a thick mass of rice so best not to let cool and get some of the enzyme working to thin down .

Might try a very small batch tonight so I can see if it thins out with the barley and I get some conversion in little time I'm trying to get the smooth rice flavour and conversion from the malt, any will do but barley seems to have high do so ill use that

There is lot of barley malted in Perth and Brisbane but it seems most is for export .

Well I tried a small batch of rice malted barley and that's it, turnout out good maybe could have cooked rice a bit longer to make the liquid thicker then after I cooled it I added malted barley just enough to convert it then I let it cool and added yeast and it's still bubbling now well see how it tastes this week if it's good i might do a big batch

What are the amounts you used? Did you take sg reading?

I used 1 part rice 1 part sugar and 1/5 part barley and 7 parts water you can use that to do any size batch. I took a reading of 1045 but it still had bits of stuff in it and I would probably use a touch more sugar and rice and heat the rice up more will definitely get a higher reading

I stripped and pot stilled some rice using yeast balls. A lot of work but the flavor was amazing :handgestures-thumbupleft: will be trying it again soon but with some changes to make it easier to use. The rice and malted barley would make a nice vodka imo with ec1118.

Why was it so much work.
I didn't go all grain because I wanted to see the reading if I put in some sugar same amount as the rice and see if I could work out the conversion

Far too much effort in racking, straining the rice but have been thinking of easier ways since my last try but that's off topic for wheat vodka :teasing-tease:
