First time using Dunder

I’ve now getting a little more confident and have collected of what I believe to be dunder from a stripping run and would like to add that to my next spirit run so I have a couple of questions
Do I stir it up and add 20% to the spirit run and should I be avoiding what’s on the top it looks like a thin film not sure exactly what to call it,I’ve had it sitting under my bench for about 3 weeks so not exactly aged or should I be adding it to my next ferment

Add it to your next wash not spirit run, you just spent the time and effort stripping the alcohol out of it

People add it to spirit runs also. Sounds like Lacto on top. It wont hurt you but will "sour" the flavour.

Yeah i have added dunder to spirit runs previously but didn't work favourably.

Give it a try and see what you think

I have no experience with whiskey but imagine it would be like a 1.5 run lw+dunder..the 1.5 rum runs I did via pot were nice bold rums but needed more age/time on ak to come good
These day I prefer a cleaner spirit(via bubbler) and shorter time on oak. 6-12mnths. A well cut spirit does not need heaps time on oak. Just my humble opinion...

Looks like I’m best off adding to my next ferment at the start or at a later stage of the ferment also am I correct in thinking I can get more dunder after that ferment is run through the stripping run

Like everything in this hobby your personel taste will guide you. What I like and what you like might be very different. Trying stuff is only way you decide whats for you...

i keep dunder infected and uninfected.
i add both to my spirit runs.
i've only added uninfected dunder to my washes (so far).
you will get dunder from each strip and end up with shedloads :smile:

i am after that caribbean/south american taste though (like 'diplomatico rum reserva exclusiva')
i like to dream :roll:

there are also a few other habits on a spirit run i have picked up.
heat up slow (don't really know if this makes any difference)
hold the still in full reflux for about an hour on a medium rolling boil.
then switch to potstill (ie turn the RC water supply off)

if the dunder is infected, try and rack it from under the surface stuff.

Decided to add to the stripping run today will do a spirit run tomorrow fingers crossed for a favourable result thanks for all the advice
