Introducing myself

Hi everyone

Like many others, I’m starting off with the T500 setup Santa gave me for Xmas. I have found this forum invaluable, especially on how to get the best out of the T500 (low and slow seems to be the way to go).

I’ll mostly be making gins using store bought essences and some straight spirits that I’ll let the mrs play around with for limoncello. Happy with my results so far.

Down the track I want to move toward botanicals rather than essences and start making my own unique gin variants using things that grow in my area. I’m in the Adelaide Hills (yep we had big fires a few weeks ago) so have access to plenty of Aussie native plants.

Looking forward to asking lots of questions and hopefully, in time, contributing!

Hi Dave, welcome to the forum. Low and slow is definitely the way and do good cuts.
What wash are you using?

equipment: Eve - 4" x 4 plate solid state bubbler (sieve plates), 330 mm packed section on a keg boiler with 2 x 2000 W elements.
Currently having a makeover: 2" x 4 plate solid state bubbler (1" bubble caps, no sight glasses...maybe not for much longer!) on a bain-marie boiler.

Hi mate welcome aboard.

If you want to do gins with botanicals you'll need a pot still as well as your T500. I would also be weary of what you use in your gin. You say lots of native plants, not all plants are good to be ingested, some may harm you so do some research before dropping it in your drink :handgestures-thumbupleft:

equipment: 4 plate 6" copper bubbler, 6 plate 4" glass bubbler with 500mm packed section three way thumper sitting on a 50 ltr keg boiler with 6000watts, 2" pot still and a 2" boka.
