Iam joe
I started my homebrew journey in 2007 with coopers pale ale kits from coles and apple cider/wine from coles homebrand juice.
I have been a gin drinker from my teens so mid 2021 got myself t500 with copper column and started my sugar wash learning.
i use t500 for the spirit ,make aggresive cuts,filter thru activated carbon and then do batches of gin thru air still.
i REALLY enjoy it (not only the drinking but the whole process).

You might find Zymurgy Bob's gin extract on this site interesting.
I use my little air still to make the extract and then add it to neutral - that way the flavour can be as strong (or not as strong) as i like.

Using this method I have made rose gin, umami gin (mushroom), seaweed gin and a clone of 40 spotted gin.
The possibiities are endless.

thankyou all for your welcomes.
my first gin i made was the air still recipe in the manual and i love it.
currently trying different maceration recipes instead of vapor infusing.
i can only try.
