Yea have seen the snake method. Ok i must be doing something wrong cause mine does not get that hot. I just got a decent thermometer so will have better idea whats going on :handgestures-thumbupleft:
I did this other day but just browned it off after a sous vide bath. Temp was low took an hour but gave it a good smokey/char grill taste.

equipment: 2" pot with 2" shotty 400mm long 5x 1/2" on a t500 boiler.
50l keg boiler 4" still mount 4" sight glass 1" drain..
4 plate 4" bubbler, 600mm packed section

Just looking mate and believe me Im a noob at this but is your charcoal in the lower aluminium tray?
could be theyre not getting enough ventilation to get really hot.
I run mine on the grate or in baskets.

No it was empty i had water in it but held the temp lower. I emptied it but left tray in
..charcoal was just on grate under the vege..
