Good yeast for TPW

Postby pafc64 » Tue May 07, 2019 8:35 pm

Hi All

Ive got a Turbo 500 still & have been using Still spirits Distillers Yeast 72gm for 27 litres of Tom Paste Wash & have been getting 4lts of 96% from it & it tastes really nice.

I used my last packet tonight & went to buy some from ebay & theres no supplier left in Australia its all USA or UK & any of the Aussie online shops say they are out of stock, I saw one person asked when they would get more & the commented that this product was no longer available in Australia.

Im worried with the new bio security laws I wont be able to get the yeast from overseas.

Why has that happened anyone know why.

Is there another brand of Yeast readily available in Australia suitable for 27lts of Tom Paste & copper reflux still giving me a nice Gin/Vodka spirit ?

Cheers
Rick

For tomato wash I've used just plain old bakers yeast with fine results.
Same stuff mom uses to make biscuits. It likes it warm around 25°C territory, and comes out great.
Cheap too!

For TPW I'd go for EC118.

I've been using the Lowans, with really good results. I use 70gm, so I get 4 batches per tin of yeast.
Don't just sprinkle it on top though, as its a real pain to get to dissolve. I found the easiest way was to add it to your empty tomato paste bottle, half fill with cool to warm water and shake like hell. You will need to rinse the bottle out into the fermenter a few times, as it makes a bit of a sticky mess, but it dissolves straight into the mix instead of floating around on top or making clumps.
Mine is bubbling through the airlock within 15 minutes, although it took closer to an hour for the CFW washes, for some reason.

That's no way to treat the little fellas! Sprinking on top of the wash and a gentle stir should be sufficient unless you want to do a starter using a smaller amount of yeast.

I use EC1118 as it has a higher alcohol tolerance and gives a clean finish.
You can use more sugar without getting any nasty flavours as with a bread yeast.
It costs more but if you oxygenate the wash you can use about a third less as the yeast multiplies will using up the oxygen in the wash. When that's gone it then goes into alcohol producing mode.

:text-imwithstupid: Wot he said :handgestures-thumbupleft: TPW is not worth wasting expensive yeast on IMHO.
BTW, if you want an even better wash, try Teddys FFV. A little bit more effort but well worth it.

I’ve just run two washes, one with yee ol cheapy Safeway yeast and one with saf-gold. I noticed a significant difference and won’t be using the cheap yeast again.

This is actually good advice because you can test the viability of your yeast. If the yeast doesn't start reacting within 15min with the sugar shot then it's likely too old. Shelve it and use it as 'food yeast' and go and buy some fresh stuff.

Hey Rolls, what was the significant difference?
Was it:
- Ferment speed?
- % Alcohol in low wines?
- Flavour in spirit run?

Cheers

Hey Crazyk,

I have used SAF Gold yeast for CFW and all grain bourbon. It ferments strong, is very forgiving with temp changes, tolerates relatively high sugar content and is very neutral in terms of flavor. I would imagine its perfect for tpw.

That's what I used to do my TPW cleaning run. Finished fast and clean.

I've read somewhere that you should use the same wash, diluted, as what you will be fermenting. Sugar wash - sugar and grain beer - Grain beer. Some yeasts tend to have a problem switching back and forth from sugar to grain. They will all eat sugar, but must produce an enzyme to brake down maltose. Think of it like giving children candy before dinner.... steak has to be chewed hard candy just dissolves. The kids wont eat their dinner but will wait for sugar leaving lots of unfermented wash. Lesson learned from adding too much sugar to a beer recipe from the beginning.
