Angel Red Label

Currently experimenting with a new (to me) yeast from Angel.
This is a thermal tolerant variety good for up to 42c ferments and down as low as 2.5pH. Alcohol tolerance up to 17%.
So far had a very fast ferment with an all grain barley and rye ( mashed with hi temp,liq enzymes), and a very fast ferment with all wheat vodka (raw wheat with enzymes)
Will upload a couple of ferments in action
Note this is not the yellow label

Guessing this doesnt have the no mash conversion ability ?

No to both queries. No included enzymes but far from bakers. It is a specialty alcohol yeast

their range of yeasts is very extensive when you look at the Angel site.
red & white wine, ipa, stout, rice etc etc
pity they are seemingly hard to get.

Very interested in this Teddy. Where did you get this from? The one I saw on the internet says it's a 2 in 1. Is this the one you are trialling? :-B

amazon is easy and cheap. request a sample or buy a box in a group buy bearing in mind if you want to mash an 1k container then that's a good amount anyway:)

At this stage my feeling is that it is a powerhouse yeast. Not great on a sugar wash but with all grain it is great.

Have done a couple of all grain wheat vodka ferments. Holding temps at 28 degrees+ it flies along with no noticeable off flavours.

Also have put it into an all grain corn, barley wheat with the same speed.
Very economical 10g is plenty for a 60l ferment and a second ferment kicked off quickly using the slurry and no added yeast.

I wasn't sure if I should start a new thread but I figured I'd post here and see if I get any replies.

I got a stupid fast ferment with this. 24 hours took me from 1070 to 1000 flat at 35C. I know it is supposed to be fast but this was increadible.

Have I ruied my wash stressing my yeast out and making it go too fast? I used 14g in a 22L wash of malted barley, added inverted sugar to take it from 1050 to 1070, pitched at 33C, went off like a rocket, not much head just heaps of activity.

I get home from work and it's silent no activity. Thought I put too little yeast in so took a gravity, 1000 (maybe slightly under).

Any thoughts?

Also, it did not race through my rum wash or my other grain wash (wheat, corn and distillers malt with a little sugar) at 28C.

No, I don't think so. I haven't used that yeast, but some people will deliberately stress their yeast for the flavours it gives.
"Just run it" is the answer 99% of the time with these things :handgestures-thumbupleft: .
You might find some amazing flavour, you might find a larger than normal heads cut, you might not like it, who knows???
Your biggest fear should be that if you love the results, you don't know how to reproduce the same fermentation! :smile:
Someone who has experience with the yeast might give a better answer, but I'm sure they'll still recommend you run the wash.
