First time Dady Yeast with all Molly

Hi Team,

A couple of question to put to the brains trust,

1. This is my first time using Dady yeast with a rum wash and it seems less vigorous than the lowans, is this a thing or do I need to look for another reason?

2. I am trying an all Molly wash but have been having difficulty getting a Litres of Molly to Water ratio, any wisdom on the subject would be welcome. Or direct me to the answer

1. Yes the dady will not be as violent as the Lowans but will still work out nicely albeit a little slower. The Lowans LOVES molasses.

2. Not sure there is a true ratio to use as the fermentables in molasses can / will vary wildly between sources. I use 8L per 30L fermenter (28L wash) & 16L per 60L L fermenter (55L of wash). So 1L to 3.5L water.

FYI, I find all molly rum needs longer to come good than a 50/50 Rum but when it does its goooooood.

Hey Bigrig,

When you say Molly rum needs longer to come good, are you saying longer on oak or will it improve with time regardless.

I have a Molly/sugar run that I’ve stripped, that still needs a spirit run, tasted a bit and it’s not good. Lol ( probably not the best idea and not indication of what the end product will be like)

This is my first go at rum so it will be interesting to taste the end result

The all molly will need longer on oak but will have more complexity to it.

My all molly rum takes 12months before it is drinkable, whereas the 50/50 rum using the same oak is drinkable after 6 months.

I made the mistake of sampling all molly at 3months and made me puke not good :puke-huge:

Have enough stock so nothing is younger than 12months by the time u get to it :handgestures-thumbupleft:
