I'm late to the party but I'll add my 2c, though maybe someone else has said the same.

Don't bother rehydrating AY. It just sits in the jar and stares at you wondering where the hell it's starches are.

I just throw 4 bags of 1.8kg rolled oats from coles into a batch filling it up to 30L at about 30C and then pitch roughly 55g of AY straight in, stir and roughly 8 hours later it's bubbling away like crazy. Don't heat the oats, they will froth like crazy with the AY, blew the head off my fermenter the first time I tried that.
