OK bt1's quicky guide for use now we're all taking deliveries...
New use
For 60lt ferment use two slightly heaped desert spoons
rehydrate in a good quality water @ 35c = spring water 200mls
sprinkle over the top of a fast swirling water, mix gently to avoid lumping if any
by adding wash desert spoons after 10mins bring to within 5c of wash temp
Plunge into swirling wash , rinse out in wash = your done!
Low Yan conditions= lack of amino Nitrogen to be avoided so if doing AG, Partials or UJSM's, ciders add a little DAP to wash. not needed for rums. This avoids the rotten egg smell from low nitrogen levels = ie you need more than just sugars.
Re use
200ml spring water at same temp as wash with little dissolved LDME or wash added
spoon 2 desert spoons of yeast slurry in stir gently
While prep'ing wash progressively add more wash or dissolved LDME = growth phase
as this ones been trained it's a quick starter and ferments dryer=lower FG. re use upto 3 times can go 6 reuses. Well suites sour mashing.
General
re use for whiskies no issues. Rums tend to use a newy each time
If used in ciders crash chill to prevent complete fermentation otherwise it's as dry tasting as weak vinegar= stop it fermenting out
Easily handles SG upto 15%+
good temp tolerance
