I'm a bit confused about the column in between the condenser and pot still however.

It's a 3 plated still with valves, not too hard to figure out ;-)

The valves I can see make the rig either a pot still or a bubbler, the column on the RHS has a sight glass on the reflux condensder.

Very basically I see it as a pot still with 3 plates that can be turned on or off, awesome for separation of cuts :handgestures-thumbupleft:

I thought yeah obviously a bubbler but as a dedicated absinthe still I'm pretty surprised that they would use it. What didn't occur to me was as it is only 3 plates.

I believe these still can be run as a pot or a plated column, used for making two different beveridge's.

Holstein?

That would make sense WineGlass, it does seem to be a Holstein type design but maybe not Holstein built. Maybe Oliver Matter uses it for some other products. I wasn't aware he made anything else. It seems impossible to find what else he produces though.
