I have a similar setup and the thing works sweet. Great post.
Got to say the AC makes running the still so easy, I got a 50L water tank and a 2.5KW condenser plumbed up with and old submersible pump. Pump is slow due to the head it's pushing but the setup knocks down 1200w no worries and keeps the tank water temp at a constant 30C here in NQ.
