4 Pillars Christmas Gin

Postby Carol » Mon Dec 07, 2020 9:27 am

Hi Guys
A friend has asked if I could make something like 4 Pillars Xmas Gin. According to the website they make Xmas puddings and put the puddings into the basket with botanicals. I cannot see any advantage in going to all the trouble of making the xmas pudding first. I have found a recipe for Christmas Pudding Vodka ( Hairy Bikers) that I can adapt to gin ( with Zymurgy Bob's gin extract). Just checking with the wise ones that I am not missing an important step in not making a pudding!
It does make a good marketing story though!

Cheers

The only difference I can see is that the pudding ingredients would be cooked before adding to the still, where-as you'd be adding them raw if not making the pudding.

Thanks Tubbsy. I would only be using the fruit and spices, not adding flour, eggs etc. The fruit and spices would macerate for a while and then be strained off.

Juat thinking out aloud. Simmer the fruit gently first so that the fruit plumps up, maybe in tea? Or soak in tea first?

Isnt rum a big part of a pudding ?
Maybe add a little rum for the soaking of the fruit and use the water/rum mix to add to the liquid in the boiler

Thanks Andrew. Will add rum to the list of experimental options.

Closest thing I know of is Tokay/Topaque.
I use it on bread and butter pudding.
An added splash wouldn’t hurt would it and the leftovers will go great on ice cream.

Mrs Tesla soaks her Xmas pudding fruit in brandy for a few weeks before putting it in the cake mix.

I don't think you can get shillings any more - although I might have some in my ancient coin jar from 50 years ago!
