Higher ABV

Postby Lowie » Fri Jul 02, 2021 9:04 pm

I hadn't stilled for about 6 months or so while I was getting my new man cave built and the other day I found a cube (30L) of rum that I had racked off the fermenter after 2 weeks or so of fermenting. Anyway, I ran it through 4 plates last weekend and I got 1.8L of 95% hearts. Tasted great off the still. I usually get around between 75-85% so it makes me wonder if I should be letting it sit longer in the future. anyone else get the same sort of results?
