Stripping run of about 100L of Apple Brandy today then possibly strip the Millet Whiskey as well... see how the day goes...

Started that Pastis/Ouzo mix at 10am this morning and running slowly 25 minutes later :laughing-rolling: Just had to run this as the maceration was leaving a nice strong smell in my shed.

Should be over by lunch then time to fire the BBQ :handgestures-thumbupleft:

Lovely wet Easter Monday here in central vic. The rain gods are taking care of the garden today so time to fire the bubbler and get another mulga bill ( BWKO with a bit of added rye ) run done. Great day for staying dry and will even get to lis5en to the footy later today. Happy Easter guys hope you had a good and safe one and all get to enjoy the break :)

1st 1 got some pot still rum and little bit off the late tales and the 2nd 1 got early hearts, cane vinegar, and some dunder from 2018 that smells bloody good.

Really took the flavour to the next level and totally changed everything! Watering some down to drink white was like trying to mix water and oil :laughing-rolling:

Running out of fermenter space atm so running the millet whiskey atm. Wasn't a planned run today but needed the fermenter ASAP so guess I'll be seeing how the millet tastes sooner then expected...

Just starting to take the fores off now. Smells bloody good so far. Be interesting to see what the hearts smell/taste like. Surprisingly the liquid syphoned off the top of the grain was a lot clearer then I would have expected from such a small grain/really finely ground. Doesn't matter much to me though as everything went into the boiler for the stripping run...

Prickly pear brandy!

Bout 40kgs chopped up and fermented with some Chardonnay yeast, 1st run in the Bain Marie pot still and 2nd in the pot still. Should end up with about 2l of the good stuff! Smells funky as hell.

I like that set up my 2nd thumper is a lot smaller but I'd love either a 20lt keg or to run a 3rd one for a, similar set up.

I just pitched 70lt of rye whiskey myself today. I've grown really fond of a heavy rye taste, it ages so nicely.

Actually now I've been thinking about things.

How do you find running the two same size thumper?

I'm not happy with the bubble plate I added to mine and I usually run a 50lt keg and a mini 4lt thumper set up as per the profile pic.
But I've got a spare 50lt keg and plenty of spare parts to make a 2nd 50lt thumper.

Does it weaken the flavour any and does it make it a bit smoother or just higher proof?

Mashing a second batch of Wattle Seed Whiskey today. Last batch aged for over a year before it was finished off. Quite a nice taste to it (hopefully Ruddy will back me up on this) but this time I'm lowering the amount of Wattle Seed to see what happens as the last batch the Wattle Seed almost overpowered the whiskey... see how we go

Yeah mate the thumpers work very well, as for flavour it takes it to the next level.

I’m happy with low yield’s if it means quality! Ended up with 1.6l at 75% from the run!
