dunderpit_1week.jpg

yep, I got two going in the moment - 20 and 40L . After one week they looked like that.
After 6 weeks (now), they look a lot more interesting :scared-eek: and the smell coming of them.... hmm .... is interesting. 8-}
Will use some of the stuff for starting my next rum generations in spring... :banana-dreads:
cant wait...

Dunder is backset specific to rum.

A dunder pit is a whole other animal. If i tries to explain it i would butcher it and offend rum lovers everywhere.

I suggest reading the wiki to begin with and go from there. https://www.google.com.au/url?sa=t&rct= ... 8174,d.dGo

yep that link is a good start, but it doesnt mention what a 'life dunder pit' is. hehe.
basically, you let the dunder from previous runs go manky hoping to get beneficial wild bacteria/yeast/fungi infections.
the bugs use the unfermentables to make lots of interesting molecules that impart a 'unique' flavour to the rum (after next round of molasses ferment, distilling and ageing).
Thats the theory at least, thought i give it a go.

You fellas that keep a pit, do you chuck in the scud from the boiler walls that forms after a stripping run?

Stripping a rum wash sure is dirty business!

From what I've read you can chuck in anything you want. Banana peels, rats that have drowned in it, etc... :laughing-rolling:

Yeah i could handle anything vegetable related but throwing once breathing animals or parts of said animals into it seems like an invitation to have the stinkiest garage in history!

There's a reason Jamaicans keep their dunder pits out the middle of the bloody forest me thinks :)) I have heard of roo heads as well. If i had a jungle pit i would throw people i don't like in there 8-}

Started out 2 to 4L per 50L wash for stripping then swapped to adding it to boiler for each gen after a bit of research, then also for the spirit run :handgestures-thumbupleft:
