hiya folks, long time no see...

anyhoo, i get 7 weeks of over winter so im going to have a lash with the angel yeast for likker. What grain bills are folks using? Ive got Barley, corn, wheat, rye and a couple of types of malts for flavour (since i wont need the DP of them)

At this stage i swiped these grain bills from another thread to try but im not sure about how much grain per litre of wash.

Makers Mark:
70% corn
16% wheat
14% barley malt (6row)

Wild Turkey Rye 101 proof:
65% rye
23% maize
12% barley
Wild turkey:
75% corn
13% rye
12 barley

Jim Beam:
75% corn
15% rye
10% barley

Jack Daniels:
80% corn
12% rye
8% barley
They all use a 33% backset with the exception of Jack Daniels, which use a 24% backset.

any and all help, comments or opinions are welcome and i will update this thread with my results as time goes on....

I have been doing 70/20/10 corn malt rye with 20% backset. Not a bad drop. Next round will be 80/12/8 for more of a tenesee whiskey. Interesting they use 33% backset might bump mine up.

I have also done 100% corn with good results(i like it white) and I intend to do 100% wheat vodka.

Edit:btw jd is 12% barley 8% rye not other way round.

The 80 corn, 12 rye, 8 barley is George Dickel
Couple I have in the works with some of the above
Bentsticks ROW, 50 rye, 25 oat, 25 wheat
SCD's Choc sunday, 60 corn, 5 choc wheat, 5 caramalt, 30 barley - except I swaped out 20 of the barley for oats
Couple more to try
Jim beam rye, 63 corn, 27 rye, 10 barley
George Washington rye, 30 corn 60 rye, 10 barley - not far off the turkey rye

Well my mill arrived today so ive put it all together, time to pick a recipe to try....

i think this is it....

Wild Turkey Rye 101 proof:
65% rye
23% maize
12% barley

im not sure how much grain per 25 litre wash so im off to Teddysad's mashing thread for a wee browse... gotta be better than actually working!

I use 15kg per 40l if that helps.

No issues with the ferment at that rate bluc? 15kg per 40 is a whole lot more attractive then 10kg

No zero issues. Also sour mashing no issue.
In fact it ferments better then my sugarhead whiskey. :handgestures-thumbupleft:

:scared-eek: Crikey that seems a lot... i ended up going with 5kg per fermenter, they are the blue 25lt type but i reckon there is only 20 lt in there (maybe, the grain took up the bottom 1/3 of the drum..) added 25g of the magic too...


im still at the very early experiment stage so im happy to adjust the next time round.

I did notice that my mill had a hard time with the first pass.... maybe just needs to bed in a little but the 3rd roller seemed to jam a bit...

First ferment ticking along nicely... im going to mill the grains for the next batch tonight...
im thinking Bentsticks ROW, 50 rye, 25 oat, 25 wheat to see how it goes.. (thanks RC Al)

not many recipes out there with no corn which is a surprise...

fun stuff for sure, amazing to watch the yeasties and enzymes doing their thing. :happy-partydance:

EDIT: might drop the grain to 4.5kg per fermenter too... the 5kg ones are more than 1/3 full of grain!!

just got home and i dont have enough rye to do that recipe... so...

1/3 each rye wheat and oats, recipe freshly stolen from HD...

EDIT: nope, dont have oats... gonna sub in barley...

Morning, is that 3.5 litres everything you got?(heads, hearts n tails?)

I ran the wild turkey rye batch yesterday and just did the cuts now, i got 2.1 litres at 65% to keep and prolly another 2lt to add to the feints drum. The yield seems a little low but im still learning and since this was my first wash with this yeast im still pretty happy. I added 4.5kg sugar to each drum of the drained spent grains and added bakers yeast to see how that would go, currently fizzing quite nicely. Should i add some nutes? I dont have dap but do have tom paste or epsom salt.

I also put down a 100% corn wash to see how that goes.... fun times!

I have been using tomato paste in sugarhead whiskey with success. The tomato flavour comes over right at end just before tails is easy to cut it out and doesnt seem to affect flavour much.

cheers bluc. I just ran the next batch and the yield looks about the same as the first one. Admittedly my ferm temps are prolly a bit low, ive got the room hovering about 22c now.....

how much tp are you adding? maybe just 50g or so to richen up the wash?

run over and next wash put down (3.5kg wheat and 1 kg barley per 25 lt), time for a wee taster i reckon...

well, just did the cuts on run 2 (1/3 each wheat, rye, barley). Yield was 1.2 lt @ 60%, very disappointing but it has decent flavour so i guess thats something... bought 10kg more of each of wheat, oats rye and barley (only cost 20 bux so im happy) so the experiments continue.

test 3 (100% corn) is fizzing nicely and test 4 (77% wheat, 23% barley) is also fizzing away. Hopefully heating the fermenting/brewroom to 23c will work better than heatpads did, time will tell i guess..
