What Temperature for Baker's Yeast

Postby Moonshyner » Fri Jun 17, 2022 8:42 pm

What is a good temperature to ferment at for baker's yeast (Lowans)?

I only ask because my sugar wash has been fermenting for 16 days at 24 deg C and the airlock 'pops' every 32 seconds.
The wash consists of :-
3kg sugar
2.5kg dextrose
75gr Lowans dried yeast
1 tsp DAP
2 multivitamin tablets
Water to 26 litres @ 5.3 PH

Would 30 deg C be better?

Cheers,

1 bubble every 32 seconds, i would say its done. Have you tasted it?

If there is no sweetness, run it

And to be honest I think the yeast hasn’t had enough food to keep propagating correctly

It definitely sounds like it's done, I've had the same yeast at colder temperature finish in less time.
30° would be a better temperature for future batches but as for this one give it a taste and see if it's ready.

One question to ask, did it always bubble that slow or has it dropped down to that rate?

When it first started it was about 1 every second.

After posting last night, I upped the temp to 30 C and after about an hour it was popping every 12-15 seconds

Tasted it a few minutes ago. Not sweet at all. Bit like a dry wine.
Checked the SG and it was .990 @ 30C.
Put the lid back on and it was popping every 5-7 seconds. But only for a few minutes.
Turned off the heat and now waiting for it to clear. Will probably use Turbo Clear to speed things up.

So for my next batch with baker's yeast, I'll set the temp at 30C.
And give it some more nutrients.

Thanks for all the suggestions.

Cheers,

I would stop using fertilizer and use something more natural

Have a go at TPW or WBAB instead of using just sugar and chemicals.

Nothing wrong with using a fertilizer.
Nearly all the fruit and vegetables (including sugar) we eat have been fed with a fertilizer of some sort....organic OR chemical.

So there is a chance that the sugar used for a sugar wash has been treated with chemicals in one way or another.

Splitting hairs , your recipe might as well be a turbo pack
And I’m not a fan of urea in my wash/mash
