I have done a few batches of this and its very drinkable as whitedog, but I mainly used it for making blended bourbon whisky if there's such a thing.
I also found that a lower starting SG gave a more concentrated flavor in the end product, probably due to the lesser volume of alcohol, the available flavor doesn't get spread as thinly.
I liked the flavor at a 1.6 starting SG, if the flavor came out too strong one could always dilute it with some good Neutral (which I highly recommend keeping on hand for a myriad of uses)
Initially in my washes I was usually aiming for around 1.08 SG, not realising this.
