A friend had a bottle of the real thing when it was available as a limited edition. She loved it so we played around until we got something that she thought was as good if not better than the real thing.

1 bottle of Aldi caramel topping ( 615g)
2 x 200ml long life cream ( Australia's own whipping cream from Coles or WW)
500 ml neutral at 40%
2 teaspoons salt ( I used Himalayan Pink salt)
1 tablespoon caramel syrup for coffee ( from Aldi)
few drops of Parisian Browning essence if you want a deeper colour.
Makes approximately 1400ml.

I have tried this with Hersheys caramel topping but it tended to make the cream form small clumps which had to be strained out.

Good one Carol. Here we are stuck in isolation putting on the kilos and now you present us with that. ....... I think you may need to add a napkin to that recipe. I’m sitting here trying to wipe the dribble off my chin. Sounds really yummy.

Sounds yum, you could probably bump up the abv in the neutral though, I get a final abv of 14.2% (if I’m awake enough to be doing it right 8-})

The low ABV is deliberate ( although the label says 20%). Baileys can sneak up on you and a lot of my taste testers are of mature years and not what you would call seasoned drinkers. They tell me that they don't drink much and then ask when the next sample bottle might be coming their way!
So I would not like them to get tipsy and fall over and break their hip!

You can tweak the ABV to your personal preference. i think the original was around 17%.
