If you started at 1.080 and are down to 0.940 you are talking around 11-11.5%.

0.94 is a good dry reading, should taste sour and as said ready to strip

longhand................
1.080 - 0.940 = 0.14
0.14 x 131.25 = 18.375%

what yeast were you using?

Weel, I checked your calculator MrM and still got the same 18% using Stigs calculator.
So I guess I'm asking if that is normal - I thought I should have 0.99ish and 11%ish abv. Can I run it at 18% if that's correct? How did I get to 18%?
So Rob, to answer your question, I'm still in a constant state of confusion. :wtf:
I guess I'm just following advice to the letter like T&P wbab adding citric acid. Nothing about controlling ph. which I now understand.
Hopefully I can still get some reward for my effort.

Sorry typo on my part, I put it in as 0.994 :D .

18% is correct, but might not be adjusted for temperature? Might count for a percent or so?

Edit: Either way, you are still good to go - run that WBAB stat!

My starting point was WBAB 53 litres
21 WBs
7 cups AB
11.5 kg sugar
172 g Lowans Bakers yeast
3.5 ts Epsom salts
1 ts citric acid as the ph was around 7

Start readings
33 degrees 4.5ph 1.08

Reasonable mix. Lot of yeast - you could halve that and be fine.
Edit: 4.5ph is a bit low, 5.5 usually the start target - unless you intentionally wanna sour it :handgestures-thumbupleft:

Hang on kids, I was right with my "typo" earlier. You've all been on the sauce and took me a second to realise you are incorrectly correcting me. 1.080 to 0.994 is the correct reading on the hydrometer. 11, 11.5%. Moving on.

No mate, more yeast doesn't equal more abv. Might speed things up a day at best - usually not worth the cost. Run that WBAB :handgestures-thumbupleft:
