Hey all
New distiller , completed my first finished product using an air still pro , in hindsight I wish I’d gone a bigger still but circumstance I thought it would be a good option
Used a tpw and the fermentation and clearing went very well , 2 weeks light yellow very clear wash
Pot still strip run got 50%
Diluted to 20% to try to get the best I could get
Untrained nose and taste it was hard to separate the cuts , I went approx 200ml heads , approx 500 hearts and 60-80 tails
Bit harsh but not to bad , definitely wanting better but time has improved it
Ended up with just offer a liter of bourbon at 37% , 1.3 litres sambucca , 2 litres port
Aged the bourbon for three weeks on 18g heavy oak dom8no and added half satchel of bourbon essence , will drink this weekend

Trying a new wash with thought that do same ratios but keep , wash im using the ec1118 yeast at a slow ferment at 20 degrees with just boiled low and yeast as nutrients
200 ml heads to feints
100ml for port fortification as the port seems good
3-400 hearts for whiskeys etc
Tails to feints

I’ll add my questions about still recommendations in another post , I can’t see myself with the air still pro for a long time it’s just to much stuffing around , but a very good learning experience , thanks to ai at least I got a reasonable product

Welcome to the asylum egosbar.
Have a good read through the newbie section. Your post reads like you tried doing cuts on a stripping run mate and that will never work for you, I could have read it wrong though lol. Enjoy the journey

Welcome to the Rabbit Hole mate :handgestures-thumbupleft:

Once remember once you enter there is no going back and most of all there no stupid question while you learn as we have all been there at one time :handgestures-thumbupleft:

Now unless you are doing a fruit wash ditch the EC1118 yeast and go grab some Lowans baking yeast from the supermarket as the baking yeast just works and ferments out a lot quicker.

Cheers Bryan

No strip run in pot mode into three x litre jars no cuts
Reflux into 120ml jars and some only half full when nearing hearts

Yeah a i done a cherry juice and grape juice for a port , fortified at 1.045 from 1.168 sg , turned out good I think so used the ec1118 for that and ai said if time isn’t an issue the ec1118 yeast with Lowand bakers yeast boiled for nutrient should produce a cleaner spirit , trial and error at this stage , but definitely will be buying a pot still and brewzilla 35l 4.1 to do corn mashes and bourbon , im hooked lol love it
